So, in 1978, they purchased a 22-acre farm located on the outskirts of Chilton, Wisconsin, where they began their dairy goat operation and where they raised their five children. Evalon, LaClare Farms first cheese made from their own milk, is a Gouda style cheese that has won numerous awards. It is a supple, sweet cheese with a fruity and nutty finish that is ripened for over four months. The cheese increases in complexity with age and will start to present caramel notes.
